How it works
The baker:
takes the dough from the kneader,
weighs the dough according to the dough roll weight required
and the number of divisions in the divider,
divides up the dough with the hydraulic divider,
places the divided dough rolls in the intermediate proofer for resting,
allows them to stand for X minutes (no control over the resting time!),
takes the dough rolls one by one by hand after the required time and
feeds the moulder,
retrieves the moulded dough rolls and places them on the baking
supports (trays, plates, moulds, etc.).
 
Rate / Production example
This solution means you can make bread from 3 x 120 kg dough or 45 litre kneadings in 3½ hours.
