Automatic scoring
consists of automatically
giving the cut stroke to the dough rolls.
This operation takes
place after fermentation, just before loading into the
oven.
The cut stroke is a very important step as it has a direct
influence on the appearance of the loaf, its presentation,
etc.

MERAND took over the business of
Pan’Eiffel which l which since 1991 had been making
the famous machine called Grigne Pain®.
The many satisfied clients equipped with it, the machine's reliability
and its complementary nature with our Mécarmor Universal
line - all of this resulted in us integrating the manufacture
of these scoring machines into our production.
The MERAND line of automatic scoring machines has evolved. Today, it integrates scoring on a conveyor with an optional unit for unloading and changing filets in the baking carriages. |
