Between division and automatic loading of the swing tray it is important to give the dough some strength.
MERAND developed the MF2S® stressless forming system to replace rounding by pre-stretching the doughballs.
The doughball is gently rolled on itself to give it a pre-stretched "log" form prior to loading onto the swing tray.
This enables longitudinal alignment of the gluten network. Thus on final moulding the doughball will stretch more easily without tearing.

THE STRONG POINTS OF OUR PROVERS

- Static proving: the doughball is handled gently because it does not change pocket throughout the proving process, unlike dynamic provers, in which the doughballs change pockets several times. As a result of this true rest, stretching will be easier to perform.
- Rigid structure due to our 50x50 mm tubular stainless steel fabricated frames




- Capacity can be increased on a modular basis to grow with your business
- Can be charged with rounded doughballs AND other pre-stretched forms
- Twin discharge for feed to two moulding stations (e.g.: moulder and rounder)
- Swing tray resting time adaptable to your various products (e.g.: unbaked frozen and baked fresh)
- Individual pockets for effective doughball separation even after a long rest and to prevent pairing on discharge
- Pockets in Nyltex®, a synthetic fibre with a very fine weave specially suited to highly-hydrated doughs: to limit sticking and moisture retention - Pockets are easily removable and washable

 



- Variable rate transverse flourer for flouring of pockets prior to charging - Charging system comprising two belts in V formation to place the doughballs in their pockets without a sudden drop
- 3-stage discharge system: pockets tipped into a V-shaped alignment device - placement on discharge belt -differential speed belt for doughball separation
- Pocket treatment tunnel (germicidal UV lamps and drying ventilators) + air extractor
- Choice of cladding panels in inert materials: Perspex, stainless steel or Dibon® (aluminium sandwich panels enclosed within 2 composite panels, does not flake or chip)
