Dough rests or manual intermediate proofers are machines which are used to allow the dough to proof. Because of their small dimensions, they optimize space in the bakery compared with solutions such as tables, boards.
The dough-rest machine model MER 40/135 is cutting-edge. Thanks to its welded stainless steel frame, it can take on an extension without risk, transforming the machine into a semi-automatic intermediate proofer Compact Loft.
Ease of use is improved as handling is reduced and bakers work at chest height.
However, manual solutions:
make it impossible for 2 bakers to work at the same time as loading is
in the same place as unloading,
do not give any real time savings as the dough rolls have to be picked
up one by one to place them in the moulder.
